Sometimes in life you find a little gem of a recipe that you cannot get enough of, and the nacho style feast Slimming World recipe is exactly that. I am in love.
After a few requests on my Insta for the recipe I decided my blog was the best place for it. So here we are:
What you will need:
2 baking potatoes, cut into wedges.
Low calorie cooking spray.
250g lean beef mince (5% fat or less).
1 onion, sliced.
1 red pepper, de-seeded and finely chopped.
230g tin of chopped tomatoes.
1 tsp ground cumin.
2 tsp dried fajita seasoning.
1 tsp paprika.
2 tomtatoes, roughly chopped.
150g Primula light cheese.
Salt and pepper.
Jalapeno – optional.
- Preheat your oven to 200ºC / 180ºC (fan) / Gas Mark 6. Put the wedges on a non-stick baking tray in a single layer, spray with low calorie cooking spray and season with salt and pepper. **I use my actifry for this bit** – bake for 25 minutes, then turn, spray with a little more low calorie cooking spray and bake for a further 25 minutes until golden.
- Meanwhile spray a non-stick frying pan with low calorie cooking spray and place over a medium-high heat. Stir-fry the mince for 10 minutes, drain off any fat, add the onion and then cook for a further 5 minutes or until softened. Add the pepper, cook for 2-3 minutes, then stir in the tinned tomatoes. Add the cumin, fajita seasoning, paprika and a little black pepper. Cook for 10-15 minutes until most of the liquid has evaporated. Stir in the fresh tomatoes and remove from the heat.
- Pre-heat your grill to high. Tip the wedges into an oven proof dish, spoon over the mince, then evenly squeeze over the Primula light cheese. Add the Jalapeno if using. Grill for 8-10 minutes or until the cheese starts to brown. Divide between two plate to serve.
